November 15, 2016 – Fuchs North America, a leading maker of seasonings, flavor systems and taste solutions for the food manufacturing, retail and foodservice industries, introduces the Celebrate Southeast Asia Collection – a new line of distinctive seasonings, bases and flavors. The collection’s four unique and authentic items offer exciting and delectable takes on popular Southeast Asian dishes and flavors.

Among the collection’s offerings are seasonings and blends for proteins, sauces, and soups. These items are also the starting point for food manufacturers and foodservice establishments to develop their own unique signature product offerings, with Fuchs’ culinary specialists at their side.

The New Collection

Our new Celebrate Southeast Asia Collection includes the following 4 seasoning blends:

  • Malaysian Style Curry Laska Sauce Base
  • Spicy Singapore Style Chili Seafood Seasoning
  • Thai Style Gingered Butternut Squash Soup Base

In introducing the collection, Ken Wuestenfeld, Fuchs’s vice president of sales and technical services, explained the strategy behind the collection.

"Foods and flavors from Southeast Asia are on the rise. They’ve been permeating restaurant menus and grocery store shelves in recent years and will continue to grow in popularity,” Wuestenfeld observes.

“Americans are becoming more interested in trying new and exotic foods from all over the world. Our newest collection truly is a celebration of Southeast Asian cuisine, introducing consumers to a selection of delicious Southeast Asian inspired flavors,” he adds.

Fuchs helps food companies make sense of the trends and tap into where the culinary energy is strongest. In this spirit, each of the items that make up Fuchs’ Celebrate Southeast Asia Collection has its own unique inspiration and flavor profile, yet all of them draw on the authentic characteristics of the diverse Southeast Asian culinary traditions.

Sensational Soup Basethai gingered butternut squash

Elizabeth Lindemer, CEC, Fuchs’ corporate executive chef, worked to develop blends that meet consumers’ high expectations of authenticity. “For our Thai Style Gingered Butternut Squash Soup Base, we were inspired by Thai cuisine’s use of strongly perfumed spices and spicy flavors to recreate a fall classic with twist. This delicious vegan soup fuses naturally rich and sweet butternut squash along with creamy coconut, complex and peppery ginger and finishes with bright citrus and herbal notes,” Lindemer describes.

Seasonings for Proteins

Our Celebrate Southeast Asia Collection features two items to take protein to the next level. First is our Vietnamese Meatball Seasoning, which is reminiscent of Hanoi’s ever intriguing cuisine. It features a flavorful blend of bold spices and fragrant herbs with savory garlic and onion. According to Lindemer, “Our seasoning creates meatballs that are perfect for snacking right off the grill, in a Bahn Mi, tossed in a soup or served with noodles.”

spicy singapore seafood sauteSecond is the delicious and versatile Spicy Singapore Style Chili Seafood Seasoning which is perfect for shrimp, scallops, salmon, and even crab. “We’ve put our own spin on the classic and iconic Singapore Chili Crab dish to create a seafood sauce that exhibits the same spicy, sweet and luxurious appeal,” Lindemer notes.

Spicy Sauce Base

Not only is our Malaysian Style Curry Laska Sauce Base organic compliant, but it’s also a vibrant addition to any side dish or entrée. “Enjoy as plain laska by simply serving noodles with the sauce, or add chicken, shrimp, bean sprouts and fresh mint for a hearty fall meal,” Lindemer suggests.

Custom Solutions, Too

According to Wuestenfeld, the strategy behind all of Fuchs’ offerings like the Celebrate Southeast Asia Collection is to help food manufacturers and foodservice establishments create irresistible new items that build on culinary traditions, but that are also unique.

As Wuestenfeld explained, the development process is a combination of science and art. “We stay on top of consumer taste trends. Our goal is to help food companies develop new taste sensations that they can call their own – offerings that are unique and stand out.”

With each customer, Fuchs North America goes from conception to manufacturing to delivery of an approved flavor as quickly as possible. “We have a wide range of flavor bases at the ready, and, as a result, we can provide samples for immediate testing. Then we customize and refine the flavor to attain exactly the taste characteristics our customer is seeking,” Wuestenfeld reports.

Doing so means that taking a food or flavor idea from concept to delivery can often be accomplished in a matter of weeks or even less time. “Especially when under tight product development timeframes, being able to support customers with that kind of rapid schedule is a huge benefit,” Wuestenfeld emphasized.

The collection’s 10 unique and authentic items offer delicious new twists on time-honored culinary traditions from Morocco to Syria, and everywhere else in between.

Among the collection’s offerings are seasonings and blends for snacks, meats, sauce bases, beverage mixes and more. These items are also the starting point for food manufacturers and foodservice establishments to develop their own unique signature product offerings, with Fuchs’ culinary specialists at their side.

The New Collection

Satisfying Snack Seasonings

Elizabeth Lindemer, CEC, Fuchs’ corporate executive chef, worked to develop blends that meet consumers’ high expectations of authenticity. “For our Zeus’ Own Tzatziki Snack Seasoning, we’ve taken inspiration from the traditional Greek sauce, comprised of creamy yogurt, aromatic garlic, cool cucumber and fragrant dill, and translated it into a snack seasoning that adds a vibrant flavor to pita chips, potato chips, popcorn and more,” Lindemer describes.

Our Moroccan Style Ras el Hanout Spice Blend is also exceptionally versatile and offers a vibrant twist on a traditional favorite. “In Arabic, Ras el Hanout translates to ‘head of shop,’ which refers to an intermingling of the finest spices – those worthy of the top shelf – that a shop would have to offer. We’ve taken this flavorful and distinct blend of sweet and savory spices one step further by making it organic certifiable,” Lindemer explains.

Seasonings and Rubs for Proteins

For burgers and meatballs, our Turkish Style Kӧfte Seasoning, which is Non-GMO Project compliant, hits both sweet and savory notes, using sweet-scented herbs and alluring spices.

Another versatile offering, the collection’s Marrakesh Style Grill Rub is perfect for grilled or roasted meat, but can be used as the finishing touch for sides and vegetables. “We’ve designed this rub to represent the dynamic blend of flavors from around the Mediterranean, such as fragrant spices, aromatic garlic and onion, bright citrus and a touch of honey,” Lindemer notes.

Tunisian Style Charmoula Seasoning is inspired by Tunisia’s coastal shore and integral use of seafood. According to Lindemer, this flavorful seasoning makes a delightful marinade and sauce for seafood with its perfect balance of aromatic spices, savory garlic, refreshing herbs and touch of lemon.

Sauce Bases & Condiments

For sauce bases and condiments, the Mediterranean Collection includes three special offerings. Sicilian Style Tomato, Fennel and Olive Sauce Base is packed with the flavor of robust red tomatoes, aromatic fennel and the vibrancy of olives.

Egyptian Style Dukkah is bursting with fragrant spices and sunflower seeds. “Simply mix this into a bit of olive oil to use as a dip for pitas or toasty bread, or have fun using it as a crusting for chicken and fish or sprinkling over a salad,” Lindemer suggests.

Syrian Style Za’atar Spice Blend is a traditional blend of dried herbs and spices, popular throughout the Middle East and the Northern African countries that border the Mediterranean. “Our blend, which consists of aromatic herbs, rich sesame and vibrant sumac, will easily become a mainstay on your table,” she notes.

Sensational Side Dish

This offering is a complex and tempting blend that includes an array of sweet and savory spices, aromatic herbs, roasted garlic and onions and a hint of vibrant lemon. “This seasoning will be a hit in any of your favorite side dishes!” Lindemer enthuses.

Refreshing Beverage

The Mediterranean Collection wouldn’t be complete without a refreshing beverage. In this case it’s Algerian Style Acir Beverage Mix, a lightly sweetened citrus beverage mix. “You’ll find this refreshing blend to be perfect for a hot day. Simply blend with water, garnish with a twist of sliced orange, sit back and enjoy!” Lindemer explains.

The Collection’s 10 deliciously different items celebrate the rich diversity of Latin culinary traditions that stretch all the way from the Iberian Peninsula to South America and beyond.

Likewise, people will find our Spicy Guacamole Snack Seasoning to be the perfect combination of creamy avocado, citrus, spices and chilies. It’s another way to provide a delicious flavor boost for snacks,” Lindemer explains.

Seasonings and Rubs for Proteins

Cracked Coriander Green Chili Pork ShoulderSeveral items in the Latin Action Collection were created to add value to a variety of protein. For roasted pork, Cracked Coriander & Green Chili Rub features fragrant and aromatic coriander that mingles with the mild heat and smokiness of green chilies and a touch of lime to round it out. “This rub pairs wonderfully with other meats as well, and it also works wonders as an addition to sides and vegetables,” Lindemer notes.

Sticking with proteins, the new Collection’s Chorizo Sausage Seasoning features smoky and spicy peppers blended with aromatic spices, herbs and tantalizing garlic. It makes for a quick and easy seasoning for ground pork, beef, turkey, and even salmon.

Sauces and Soup Bases

Tomatillo CremaFor sauces and soup bases, the Latin Action Collection includes four special offerings. Yucatán Chicken & Lime Soup Base is packed with the flavor of roasted chicken, bright citrus, savory tomatoes and garlic, along with just the right amount of heat from chilies.  

Chipotle Adobo Seasoning Blend is bursting with smoky chipotle peppers, tomatoes, flavorful spices and just a touch of vinegar. “It makes a great sauce to drizzle over chicken tacos as well a roasted pork, lamb and even sweet potatoes,” Lindemer suggests.

Chimichurri Argentino is used to prepare a bright, vibrant sauce brimming with aromatic garlic and flavorful herbs. According to Lindemer, it’s the perfect way to liven up a grilled flank steak, chicken, seafood or vegetables.

Tomatillo Seasoning Blend is described by Lindemer as the perfect balance of tomatillos, green chilies, herbs and citrus. “It makes a great range of flavorful sauces and dips,” she comments.

Sensational Side Dishes and Entrées

Valencia Style RiceRecognizing the roots of Latin cuisine, Valencia Style Rice Seasoning honors the culinary traditions of the Iberian Peninsula. This offering is a complex and tempting blend that includes saffron, roasted garlic and smoked paprika plus a touch of lemon for authentic Spanish flavor. “Simply add the seasoning to a favorite side dish and it’ll steal the show!” Lindemer promises.

February 15, 2016 – Fuchs North America, a leading supplier of seasonings and taste solutions to the food manufacturing and foodservice industries, announces the appointment of Elizabeth Lindemer as the company’s new corporate executive chef.

As corporate executive chef, Lindemer is responsible for working with teams of culinary professionals and R&D specialists to apply the newest tastes and flavors in the creation of unique seasoning systems for the company’s food processing and foodservice customers.

She joins a strong, customer-focused team that’s 100% committed to providing insights and answers on taste trends – and always delivering the right taste solution.

Prior to joining Fuchs North America, Lindemer spent a decade at The Schwan Food Company, most recently as corporate sous chef for the food service and home service business units at the company, where she was responsible for developing products, consumer-friendly recipes and cooking instructions along with researching and presenting industry trends pertaining to key market segments.

An ACF-certified executive chef, Lindemer holds a Culinary Arts degree from Art Institute International Minnesota. In addition to her corporate career, she has experience as a banquet and line cook with several high-end foodservice establishments, giving her a hands-on understanding of the challenges associated with delivering a top-quality dining experience.
