February 15, 2016 – Fuchs North America, a leading supplier of seasonings and taste solutions to the food manufacturing and foodservice industries, announces the appointment of Elizabeth Lindemer as the company’s new corporate executive chef.

As corporate executive chef, Lindemer is responsible for working with teams of culinary professionals and R&D specialists to apply the newest tastes and flavors in the creation of unique seasoning systems for the company’s food processing and foodservice customers.

She joins a strong, customer-focused team that’s 100% committed to providing insights and answers on taste trends – and always delivering the right taste solution.

Prior to joining Fuchs North America, Lindemer spent a decade at The Schwan Food Company, most recently as corporate sous chef for the food service and home service business units at the company, where she was responsible for developing products, consumer-friendly recipes and cooking instructions along with researching and presenting industry trends pertaining to key market segments.

An ACF-certified executive chef, Lindemer holds a Culinary Arts degree from Art Institute International Minnesota. In addition to her corporate career, she has experience as a banquet and line cook with several high-end foodservice establishments, giving her a hands-on understanding of the challenges associated with delivering a top-quality dining experience.

Fuchs North America Introduces “World Barbecue Collection” of Seasonings and Rubs

For a limited time, complimentary samples of 11 innovative items are being offered to food manufacturing and foodservice firms.

October 14, 2015 – Fuchs North America, a leading maker of seasonings, flavor systems and taste solutions to the food manufacturing and foodservice industries, introduces its World Barbecue Collection – a new line of 11 distinctive seasonings, sauces, mixes and flavors.

The new collection celebrates the wide range of BBQ flavors in all of their rich and wonderful varieties.  It’s truly a worldwide collection, with seasonings and rubs inspired by the cuisines of Africa and the Eastern Mediterranean, Asia, Latin America, the Caribbean Basin, and more.

These items are also the starting point for food manufacturers and foodservice establishments to develop their own unique signature product offerings.

In introducing the collection, Ken Wuestenfeld, Fuchs’ vice president of sales and technical services, explained the strategy behind the offerings.  “These latest profiles demonstrate how barbecue foods are a worldwide phenomenon,” he observed.  

“Everyone loves a good Texas barbecue – and one of our offerings is a great new take on that.  But barbecue foods are so much more, and our new offerings will take you literally around the world to sample all of the wonderful varieties there are,” Wuestenfeld added.  

According to Patrick Laughlin, Fuchs North America’s director of marketing and taste trend research, the World Barbecue Collection is filled with innovative offerings that draw their inspiration from national cuisines from all over the globe – and that are, in turn, influencing American tastes.

The American taste palette is expanding, and food companies have picked up on that trend,” Laughlin explained.  “Barbecue foods are no exception.  From pre-marinated meats for the grocery aisle to exciting new foodservice menu items, we’re seeing barbecue offerings that were practically unheard of just a few years ago.  It’s happening because of more adventuresome eaters who crave not only Regional American cookery, but also exotic foods inspired by the cuisines of East Asia such as Thai and Korean, along with the Middle East, India and even Africa.

Commenting on the demographic characteristics of these consumers, Laughlin observed, “We often think of them as Millennials – and it’s true that adventuresome eaters tend to skew younger.  But our research also shows that many people that are part of the Baby Boomer generation are ready to try out new, interesting food offerings as well.”

World-BBQ-Collection-2While each of the 11 items that make up Fuchs’ World BBQ Collection has its own unique and special qualities, all of them draw on the authentic characteristics of national and regional cuisines.

For example, Caribbean flavors are featured in Jamaican Jamboree BBQ Seasoning, which incorporates classic jerk seasoning along with brown sugar, molasses and pineapple essence to balance out the heat.  Another offering, Barbacoa Caribbean BBQ Seasoning, contains heavy roasted chili notes with a hint of brown sugar sweetness, savory onion and garlic, along with a campfire undertone.

Latin American flavors are represented in two items inspired by the cuisines of Mexico and Cuba.  Oaxaca Explosion BBQ Rub is an assertive, full-bodied concoction that possesses a dark mole-like flavor profile with a hint of bitter cocoa and warm ancho chilies, combined with cinnamon, nutmeg and other sweet spices.  Characteristically Cuban BBQ Seasoning, which features an inventive combination of garlic, lime, cilantro, tamarind and raisins, also makes a great marinade for meat.

From the African continent, African Braai BBQ Rub marries diverse flavors ranging from pineapple and balsamic vinegar to coriander, garlic and chilies to create a distinctive and utterly irresistible dry marinade for beef or game meats.

World-BBQ-Collection-1Turning to Asia, Tarator Middle Eastern BBQ Seasoning blends heavy chili with lemon and brown spices that are native to the Eastern Mediterranean region – perfect for use as a flavoring for yogurt or tahini served with roasted meats or vegetables.  Further east, Full-Flavored Filipino Seasoning takes a classic adobo-style sauce and turns it into a delicious dry rub.

The Oceania region is represented by Zesty New Zealand BBQ Seasoning, a surprising mixture of coconut, lime and cilantro along with brown sugar, molasses and ketchup that’s perfect for barbecued lamb.

Similarly original, Huli Hawaiian Chicken BBQ Seasoning combines soy sauce, sherry, garlic, ginger and brown sugar with a chicken broth base for a unique offering that’s bursting with flavor.

Closer to home, Bigger-than-Texas BBQ Seasoning is like a Texas mop sauce in dry form, while Sweet ‘n Sticky BBQ Seasoning serves as a great base to make a deliciously original grilling or dipping sauce.

According to Laughlin, the strategy behind all Fuchs offerings like the World BBQ Collection is to help food manufacturers and foodservice establishments create novel and exciting items that build on diverse culinary traditions, but that are also unique in their own special ways.

The Quick & Casual Collection from Fuchs contains a completely new selection of uniquely exciting seasonings and flavors that are perfect for burgers and sides, along with craveable sauces/spreads and surprisingly different and irresistible shake/drink mixes.

These items are also the starting point for developing unique signature product offerings for foodservice customers, as well as new processed food products for the grocery and retail food segments.

According to Howard Cantor, Fuchs North America’s corporate research chef, the Quick & Casual Collection is filled with innovative offerings that draw their inspiration from national cuisines from all over the globe and that are influencing American tastes.

“It’s no secret that America’s taste palette is becoming more wide-ranging with each passing year,” Cantor explained. 

Fast food and fast casual establishments have picked up on the trend and are offering all sorts of exciting new menu items – offerings that would have been unheard of on menus just a few short years ago.  These trends are absolutely being driven by younger, hipper and more adventuresome customers, he added.    

Cantor stressed that the items that make up the Quick & Casual Collection are fresh and different.  “Consider burgers.  That’s a staple on fast casual menus and a perennial favorite with customers.  But what many people are looking for are bold new twists on a classic concept.  So we’re offering three exciting new burger seasonings.  Our Smoky-Spicy Garlic Burger Seasoning is one that contains smoked red chili, roasted garlic and a bit of black and white pepper heat for the ultimate in savory meaty notes.”

Cheddar-Bacon Grind is another unique burger offering that combines sharp yellow cheddar cheese and smoky bacon with soy, Worcestershire and garlic for a robust, hearty taste sensation that also delivers a special texture in addition to a special taste,” Cantor continued.

“Lastly, our Mushroom Truffle Burger Seasoning delivers earthy, irresistible flavors of shitake, portabella and porcini mushrooms along with vibrant truffle and umami flavors,” Cantor added.  “The end result is a burger that is distinctly different – and utterly irresistible.”

sacramento-valley-garlic-herb-seasoningThe sauce offerings in Fuchs’ new Quick & Casual Collection include Yokohama Yum-Yum Sauce, a sweet-tangy creamy concoction with a touch of hot sauce that is perfect for Japanese and Asian-fusion cuisine.  Tunisian Honey-Harissa Sauce is a delightful blend of smoked and roasted chilies and garlic along with cumin, clover honey, and a fruity olive oil, inspired by North African cuisine.

A third sauce offering is Fuchs’ Ultimate Craveable Sauce, which Cantor describes as a full-flavored umami spread with meaty mushroom and cheese flavors as well as a hint of fermented notes and smoke.  “When we say this is the ultimate craveable sauce, we mean it – and we have the taste-testing results to prove it,” Cantor emphasized.

In the fast casual segment, side items are often just as important as main menu selections.  Recognizing this fact, the new Fuchs collection offers two delectable seasoning creations for creating memorable sides.  Hearty Roasted Vegetable Seasoning is a blend of herbs and spices that is perfect for fire-roasted vegetables, rice and other side dishes.  Sacramento Valley Garlic & Herb Seasoning incorporates smoked and roasted garlic along with Mediterranean oregano, cream and light cheese notes for a taste that’s distinctive and different.

The final items in the new Quick & Casual Collection are two drink mixes that represent the ultimate in unusual offerings that capture both the attention and imagination of food customers.

New offerings signal the beginning of the cold-weather season and menu items that appeal to hearty appetites.

fall seasoningsOctober 30, 2013 – Fuchs North America introduces its Fall Harvest Collection – a new line of six distinctive seasonings and mixes specially created for cold-weather dining and cuisine:

  • Roasted Butternut Squash Soup Mix – A sweet-and-creamy soup mix made from brown sugar, molasses and other ingredients that also provides a surprise hint of zesty ancho chili.  It makes the perfect hot soup for lunch or a dinner first course.

  • Mountain Meat Rub – A vigorous blend of spices and herbs including basil, oregano, rosemary, parsley, garlic and smoked paprika, coupled with olive oil flavoring to create a concoction that really draws out the flavor of hearty meats – even wild game.

  • Big & Bold Beef Gravy Mix – This traditional demi-glace is the ideal accompaniment for roasted meats.  Simply add the mix, red wine and water to pan drippings for a foolproof gravy that has great flavor and complements the meat beautifully.

According to Howard Cantor, Fuchs North America’s corporate research chef, the new Fall Harvest Collection builds on classic cuisine but adds some unique twists.    

“In the American agrarian tradition, the onset of the cold-weather season is synonymous with bringing in the harvest, and of ‘family, hearth and home.’  Some of our country’s most cherished recipes and meals come out of this tradition.  Our Fall Harvest Collection honors that tradition, while offering some interesting new variations,” Cantor reported.
