African Cuisine

We’ve been inspired by African flavors – and you will be too!

In the past few years, consumers have been pushing for more authentic ethnic cuisines and flavors. Millennials, of course, have influenced this, as they tend to be more adventurous eaters, but people in general have been more interested in having their food tell a story. As a result, cuisines from around the world have seen an increase in popularity.

With Asian, Latin, and Mediterranean cuisines seeing the most significant gains both in foodservice and at retail, our customers are always asking us, “What’s next?” Our answer: African. From Congo to Kenya, foods and flavors from Africa have seen modest gains in foodservice, but we expect African flavors to be the next ethnic trend. So for us, it made sense to develop a new collection of African inspired seasonings.

HarissaAlways Interesting African

Our taste trend research shows that African spice blends and condiments are seeing rises in popularity. Seasoning blends like Baharat, Ras el Hanout, and Dukkah aren’t mainstream yet, but they’ve seen an increasing amount of exposure in fine dining. What typically starts trending in fine dining eventually makes its way to retail, which is how we know these flavors will soon be making their way onto everything from potato chips to proteins at the grocery store.

The best thing about these blends? They’re incredibly versatile. Here at Fuchs, we put Ras el Hanout on everything, including ice cream, cookies, and snacks. Baharat is equally versatile, as it goes well on proteins, vegetables, grains, and even snacks.

Thanks in part to Sriracha, there’s been a huge increase in demand for super spicy ethnic flavors. Harissa, a Northern African chili pepper paste, has already been making its way to foodservice and retail, being featured on bagels, sandwiches, and in frozen food. Another spicy African flavor? Piri Piri, which originated in Portugal but is commonly used in Eastern African cuisine, is a sauce that utilizes the Piri Piri pepper, lemon, and spices to bring the heat. It’s commonly used as a marinade for seafood and protein, but don’t be surprised if you see it on snacks in the future.

So what is the allure of African cuisine? It is exotic for one. Millennials are super adventurous eaters and will be excited to try new menu items inspired by African cuisines. It’s also very flavorful, with unique spices blends, citrus components, and super spicy peppers and flavors. People have been exceptionally health conscious in recent years, and African cuisine is relatively healthy, as it often times features vegetables, grains and seafood.

Here at Fuchs, we’ve captured the vibrant flavors of African cuisine in several of our custom seasoning blends. Drawing inspiration from authentic dishes from Ethiopia, Mozambique, Senegal, and more, these seasonings are sure to be a hit!

Spring 2017 Flavor Insights

Spring is fast approaching – before you know it, the flowers will be in bloom, the trees will have leaves again, and your favorite Spring flavors will be back on menus and in the grocery store! Here at Fuchs, Springtime means the resurgence of some of our favorite spring flavors and the introduction of new trendy flavors. Need help navigating seasonal trends? Look no further – we put the “season” in seasoning!


Here’s what we’re expecting to see from Spring 2017 flavors:

Focus on Fruit Mango

Fruity flavors – especially in combination with spicy flavors – have been seeing an increase in popularity across categories, and there’s no doubt that they’ll be increasingly popular this spring. People tend to associate springtime with freshness, and fruity flavors fit the bill. Expect to see more Mango, Apricot, Peach and Raspberry flavors on the menu and at the grocery store this spring. We know that sweet heat flavors have been particularly trendy recently, and these fruits deliver on sweetness. Don’t be surprised to see more Raspberry Chipotle and Peach Habanero flavors in everything from snacks to salad dressings to even yogurt.


Nothing says spring like bright, fresh citrusy flavors! You can expect to see citrus flavors paired with sea salt on snacks, and even citrusy dessert flavors, like Lemon Meringue and Key Lime Pie, as LTOs and on snacks and cookies.

It's All About Avocado

Avocados have been all the rage in the past couple of years, mostly due to their reputation as a health food. While avocados aren’t exclusively a spring flavor, they do see a rise in popularity in the spring. Perhaps this is due to those lingering New Year’s resolutions to eat healthier? Nonetheless, avocado will find its way into more dishes this spring as LTOs, and avocado and guacamole flav

Cocktail Inspired Flavors

Everyone loves a good, refreshing cocktail! Beverage inspired desserts and snacks have been growing in popularity recently, so this spring, you can expect to see more retail items inspired by some of your favorite cocktails. Flavors like Margarita, Strawberry Daiquiri, and Sangria pair particularly well with popcorn, yogurt and desserts, while flavors like Bloody Mary and Minty Mojito go well with seafood.

Millennials & Snacking: Trends & Insights

Everyone loves snacking – especially Millennials. In fact, most Millennials snack frequently throughout the day, sometimes rather than eating full meals. As a seasoning supplier to snack food manufacturers, we’ve seen the impact that Millennials have had on the snack food industry. From healthier snacking options to more unique flavors, Millennials have been changing the way we look at snacks. 

Snack Nuts

Remember the days when snacking had an unhealthy connotation? In the past, there were few “healthy” options for snacks. Millennials, however, have been known to be health conscious and to look for claims on snack food packaging, more so than older generations. Millennials tend to perceive organic, non-GMO and all natural products as healthier than other products, so they’re likely to gravitate towards products with those claims. Snacks with simple, recognizable ingredients have been growing in popularity, as have snacks with high protein, low fat, and fewer calories. Sales for products like ready to eat popcorn, jerky, trail mix, and snack nuts have increased significantly in recent years due to Millennials’ interest in “healthier” snacks. Alternatives to potato chips, like veggie chips, have also seen increases in popularity for that reason.

Millennials are always on the go – and they want their snacks to go with them! Portable, convenient snack options are appealing to Millennials. Seeing as Millennials are constantly snacking, it’s no surprise that they want to be able to take their snacks wherever they go. A snack that can be eaten on the go will be much more appealing to a Millennial than one that can’t.

Beet Chips

When it comes to food, Millennials tend to be more adventurous than older generations. That’s why they’ve been driving flavor expansion across categories. Not surprisingly, flavor is one of the top factors that Millennials look for when choosing a snack. Ever feel overwhelmed by the number of flavors in the potato chip aisle at the grocery store? That’s partially due to Millennials’ interest in exciting and unique flavors. They’ve been driving growth in ethnic flavors and regionally inspired flavors. A plain barbeque isn’t necessarily going to cut it with Millennials; they’ll be more interested in a Korean Barbeque, Kansas City Barbeque, or Honey Sriracha Barbeque.

Fuchs’ 2017 Flavor Trend Insights

Here at Fuchs, our Marketing and R&D departments work hard to stay on top of food and flavor trends to make sure that we recommend the most relevant seasonings for your needs. From our market research sources, like IRi and Mintel, to social media sites, we’re constantly reading about and analyzing the latest trends. As we look forward to the new year, we’re rounding out some of the top flavor trends for 2017 for you:

It's All About Ethnic Vindaloo

In recent years, people (and specifically Millennials) have been particularly interested in ethnic cuisines. This stems from the desire to have food that tells a story, which is why we’re seeing the cuisines of so many different regions making appearances on grocery store shelves and on menus. The Asian flavor trend is here to stay, so don’t be surprised to see more Thai, Japanese, Korean, and Vietnamese flavors on your plate and sprinkled as a seasoning on your favorite snacks! Latin and Mediterranean inspired flavors are still expected to be vastly popular in 2017, but you’ll also begin to notice less mainstream ethnic flavors, like African and Indian inspired flavors, start gaining some momentum.

Savory Flavors in EverythingGrain Bowl

From savory grain bowls for breakfast, to Greek yogurt dips, to even curry ice cream, we’ve been seeing savory flavors popping up in unexpected categories, like Breakfast, Dessert, and Dairy. We expect this trend to gain some steam in 2017 as the demand for innovative flavors and unique takes on classic dishes rises.

Turn Up the Heat

As people have been becoming more adventurous eaters, we’ve been seeing more requests for hot and spicy flavors. Ethnic inspired spicy flavors, like Harissa and Gochujang, are going to rise in popularity, thanks in part to the Sriracha trend. Super-hot flavors have been becoming ever more popular, as consumers tend to view them as a challenge. So, don’t be surprised to see more exotic peppers incorporated into everything from snacks to frozen foods. Sweet heat flavors are still trending, but expect to see more exotic and unusual flavor combinations.

In order to achieve those complex ethnic flavors, several spices have taken center stage, becoming increasingly popular. Spices like turmeric, ginger, cumin, horseradish, and saffron have all seen major boosts in recent months. These spices are also valued for their health properties, making them all the more appealing to health conscious consumers.

Sour Notes

Sour flavors have sky rocketed in popularity, especially due to their versatility and mass appeal. Both Millennials and Baby Boomers alike find sour flavors and citrus flavors to be appealing. Other sour flavor profiles, including vinegar, pickled flavors, and fermented flavors are also on the rise.
