Here at Fuchs North America, we love curries of all kinds! They’re flavorful, yummy and very trendy. Curry, which originated in South Asia, but is popular throughout the world, is also really versatile. The flavor profiles work well on just about everything from snacks to sauces to frozen foods. Not only that, but curry flavor profiles can be super spicy for adventurous eaters or super mild to appeal to the masses. So what is curry and why is it so popular?

What It Is: Curries consist of a blend of flavorful spices and herbs and are usually cooked in some form of sauce with vegetables and/or meat. From Thai to Indian to African, there are so many different variations of curry. Thai and Southeast Asian curries typically use coconut milk to make the sauce, while in Indian and South Asian curry, cream, yogurt and tomato are oftentimes utilized to make the sauce.

Why Its Popular: Not surprisingly, given all of the ethnic food and flavor trends, curry is one of the top growth flavors in both foodservice and retail this year. What’s the appeal of curry? They’re exotic; every curry is different. Millennials are on the hunt for authentic ethnic foods and flavors, and curry fits the bill. Some are super spicy, delivering the heat and complex spicy flavors that Millennials crave, while others are milder and have more mass appeal. Curry also is typically perceived as being healthy, as it typically features meat, vegetables and spices that have perceived health benefits.

Indian Inspiration

We’ve been inspired by Indian flavors – and you will be too!

In recent years, consumers have been pushing for more authentic ethnic cuisines and flavors. Millennials, of course, have influenced this, as they tend to be more adventurous eaters, but people in general have been more interested in having their food tell a story. As a result, cuisines from around the world have seen an increase in popularity.

Asian cuisine in particular has seen a huge rise in popularity, and in recent years, Thai, Korean, Vietnamese and Japanese foods and flavors have all seen substantial increases in both retail and foodservice. With this new interest in Asian cuisine, it is no surprise that Indian and South Asian cuisines have also been seeing growth as well. Indian and South Asian foods and flavors have been picking up steam in recent months, and we expect them to continue to grow in the coming months. So for us, it made sense to develop a new collection of South Asian and Indian inspired seasonings.

Always Interesting South Asian

AdobeStock 70158771Our taste trend research shows that  Indian and South Asian curries are seeing a rise in popularity. Curries like vindaloo, butter chicken, and tikka masala and seasoning blends like garam masala, aren’t quite mainstream yet, but they’ve received an increasing amount of exposure in fine dining. What typically starts trending in fine dining eventually makes its way to retail, which is how we know these flavors will soon be making their way onto everything from potato chips to proteins to frozen meals at the grocery store.

The best thing about these curries and seasoning blends? They’re incredibly flavorful and meet consumers’ demands for complex ethnic and spicy flavors. Not only that, but they’re versatile. Here at Fuchs, we put a tikka masala seasoning on anything from proteins to sauces to snacks. Similarly, a curry seasoning could work in a milkshake, on trail mix, or in a cracker.

Inspiring Indian

So what is the appeal of Indian cuisine? It tends to be spicy, for one. People have also been growing more and more health conscious, and South Asian cuisine gives off perceptions of health, as many of its dishes feature proteins, vegetables, and healthy spices, like turmeric and cumin.

Ethnic Flavor Trends

 If you’ve been to the grocery store or ordered food in a restaurant in the past couple of years, you’ve probably noticed the increasing presence of ethnic cuisines and flavors. This isn’t surprising, given that Millennials are particularly adventurous eaters, and people have taken an interest in more authenticity in their ethnic inspired foods. From year to year, different ethnic cuisines see increases in popularity, both in foodservice and retail. Here are some of the ethnic cuisines we’ve seen trending this year and expect to be even bigger next year:

1. Mediterranean – Some Mediterranean inspired foods present familiarity for consumers; they’re still ethnic without having consumers get too far out of their comfort zone. Think Italian and Greek cuisine. Other countries bordering the Mediterranean offer flavorful and, often times healthy, foods too, like Syria, Egypt, and Morocco. The health factor is major when it comes to the appeal of Mediterranean cuisines. People perceive the Mediterranean diet to be a healthy, and as consumers become both more adventurous and more health conscious, they’ve been gravitating towards Mediterranean inspired foods. Seeing as Mediterranean flavors are also milder than some other ethnic cuisines, they tend to have mass appeal.

2. Latin - Latin inspired foods also have mass appeal, given consumers’ familiarity with them. This may be due to the shifting demographics in the United States and the increasing Hispanic population. Latin foods also tend to be very flavorful, and can even give the perception of health. Spicy flavors have been particularly trendy lately, and Latin inspired foods tend to deliver on heat.

3. Southeast Asian – The Southeast Asian flavor trends that we’ve been seeing go back to flavor and health as well. Asian food in general gives the perception of health, especially due to the high amount of seafood, coconut, and vegetables used in Asian cuisine. Some Southeast Asian cuisines deliver on heat too, making them all the more attractive for Millennials.

4. African – We’ve seen African cuisine begin to trend this year, and we’re expecting it to be a major flavor trend in the next couple of years. African cuisine is flavor and can be really spicy, making it highly appealing to Millennials.

Summer 2017 Flavor Insights

Summer is fast approaching – before you know it, everyone will be using up those vacation days and bottles of sunscreen. Not only that, but you’re favorite summer foods and flavors will be making their annual comeback both in retail and foodservice. We’re also seeing some new and exciting summer flavor trends that will be sure to put a smile on consumers’ faces! Need help navigating seasonal offerings? Here’s what we’re expecting from Summer 2017 flavors:

Fresh is Best 

Given the abundance of fresh produce this time of year, it is no surprise that fresh flavors inspired by fruits and vegetables would be in demand. Think avocado, cucumber, shutterstock 546342928watermelon, peach and strawberry. From dairy products, like ice cream and yogurt, to granola bars to snacks, these flavors end up everywhere during summertime. Coconut, pineapple and vibrant citrus flavors also see a boost during this time of year.

This is the time when everyone is trying to get beach ready, so people tend to eat more salads this time of year too. As a result, kale, spinach, and more green veggies pop up on restaurant menus and even more unexpected places like snacks more so during the summer.

Grill Inspiration

Each summer, serious grill-masters and amateurs alike take to the grill to attempt to show their grilling prowess and impress picnic-goers. Grilling is one of America’s favorite summer pastimes. So, smoky flavors inspired by the grill, as well as barbeque flavors see an increase in demand this time of year. Especially expect to see these flavors in food service and in the frozen aisle at the grocery store.

Bright Beverages

Every season has a specific set of beverages associated with it, and summer is no exception. Summer is all about fresh and refreshing flavors, and beverages are noshutterstock 613975214 exception. Flavors inspired by summer beverages include sweet tea, lemonade, and Pina Colada. What’s great about these flavors is that they translate well into a variety of applications, like popcorn, cookies, yogurt, ice cream, and snack nuts.
